Motivation and Muffins

Good Afternoon!  Things have changed a bit around here, but the important thing is that there is change in the form of me actually posting!  Since last check-in, the school year finished, and summer craziness ensued which included trips, races, family get-togethers, a wedding of the century, and beach beach beach!  Also, we got a special visit from one of my “best good friends” to quote Forrest or Bubba (I’m not sure which!).  I knew this summer would be crazy, so I decided to keep myself focused on fitness that I would sign up for a half-marathon.  I finally pulled the proverbial trigger back in April/May-ish and registered for the Virginia Beach Rock ‘n’ Roll.  I’m a little militant (if you can imagine for those of you that may know me!) when it comes to following a schedule especially since this is my first time running anything over a 5K.  I looked at this busy girl training schedule for inspiration but eventually ended doing up something of my own…

Saturday – Easy 3 miles

Monday – 5 miles

Tuesday – Gym/Weights (no cardio)

Wednesday – Yoga or nothing at all (usually ended up being nothing at all! HA!)

Thursday – Long Run Day ( I start at 5 miles and increased a mile a week until I reached 13)

Friday – At-home weights

I also walked dear, little Roscoe as much as possible but definitely on Tuesdays, Wednesdays, Fridays.  

Anyways, I was definitely flagging in my motivation when I got a lovely little present in the mail.

I think I was driving someone a little crazy saying “I’m not timing myself.  I don’t have a watch.  I’m just running for fun!”  😉  This thing is very sweet and has a heart rate monitor and all these bells and whistles than I haven’t figured out yet.  Tonight’s assignment is to figure all of it out, so I can use it on my lite run on Sunday.  When all this serious, half-marathon race is over, I think I’ll take a bit of a break and give myself time to focus on the busy, learning time that is coming as I prepare to go back to working mom teaching a whole new grade levels with lots of students.  Doing multiplication this year!  Yikes!  

 

With that being said, it’s time to tackle the to-dos of the day before the day is gone!  Here is a yummy-looking (attempting this afternoon) diabetic friendly blueberry muffin recipe

Ingredients:
1 3/4 cups all-purpose flour
3 tablespoons sugar
3 tablespoons Splenda sugar substitute
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon ground allspice
1 cup fresh blueberries (or frozen, thawed and drained)
3/4 cup nonfat milk
1/4 cup vegetable oil
1 egg, lightly beaten
1 teaspoon grated lemon rind
1 teaspoon grated orange rind
1 teaspoon vanilla extract
cooking spray
Directions:
1.  Combine first 6 ingredients in a medium bowl; add blueberries, and toss to coat. Make a well in center of flour mixture.
2.  Combine milk and next 5 ingredients; add to flour mixture, stirring just until dry ingredients are moistened.
3.  Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
4.  Bake at 400 degrees for 20 to 25 minutes or until golden.
5.  Remove muffins from pans immediately, and cool on wire racks.
