5 for Friday

A Friday in May…oh the air is thick with anticipation!  These weekends are extra special due to all the warm weather/outdoor fun possibilities.  This week has kind of dragged by {to be completely honest with you!}.  I think it is all the testing and all the nice temperatures.  I just want to be on summer break and doing my thing at home with Holden.  Only about 18/17ish more days to go!  The scary thing is how many End of the Year tasks that need to be checked off between then and now.  Here’s what has been on my mind this week…

{ONE}

Doing a better job with meals/meal planning!  The Mr. is a good sport, but I admit that some of my dinner entrees have been getting a little cooky/cra-zay.  I cleaned up my act tonight with a few more “normal” meals like 1) venison, potatoes, and sautéed kale 2) flounder, red onion, and zucchini in a foil packet on the grill and 3) chicken curry, rice, and peas.  He was very appreciative of more standard fare.

Here is my chicken curry recipe from Oxygen magazine…

Chicken Curry 
Ready in 25 Minutes- Makes 3 Servings

Ingredients: 
1 tbsp olive oil
1 onion, sliced
4 cloves garlic, diced
2 tsp grated fresh ginger
3 tbsp curry powder
1/2 tsp cinnamon
1 tsp cumin
1lb chicken breasts, cubed
1 cup coconut milk
1/2 cup coconut water
1/2 cup low-fat Greek yogurt
Juice of 1/2 lemon
* 1 pinch of turmeric   

1. Heat olive oil in a large skillet set on medium heat.
2. Saute onions for about 2minutes then add all herbs and spices. Stir to combine
3. Add chicken and let sear for about 2 minutes.
4. Add remaining liquid ingredients, stir to coat and let simmer until chicken is cooked through, about 20 minutes. Serve immediately.

I adapted it by using ginger powder instead of fresh {forgot it at the store}, and I added a bit more chicken.  I also didn’t realize that I was out of Greek yogurt until I started cooking.  I used a smidge more coconut milk and a spoonful of mayonnaise.  Then, I thickened the sauce by sprinkling in flour as I stirred the mix.  We had enough for a meal plus left-overs for the Mr. and me.

{TWO}

Getting outside as much as possible!  I absolutely hate staying inside on these nice afternoons.  I even contemplated washing my car today which is never a priority.  However, we did today to tackle our laundry and a few “to dos” that I had.  What a bummer!  We had so much fun at our neighborhood park yesterday.

{THREE}

Crafting – I’m excited to be off from work and have more time for little projects.  H and I made “airplanes” this week and launched them off our deck.  I got the idea from Andrea at Momfessionals.  Click here to see her cute rainy day craft ideas.  I love how simple yet fun her ideas are!

{FOUR}

We are planning a strawberry picking trip for this weekend.  We had a blast last year heading down to the Pungo area of Virginia Beach.  The strawberries were delicious!  We ended up making a batch of strawberry jam from them {plus eating a lot}!  The trick will be to see if we can prevent H from eating as many as he did last year.  The Mr. even tried to pay extra at checkout due to how many unpaid for strawberries little H consumed.

{FIVE}

The Five Love Languages – Have you heard of this or taken this quiz?  I’ve read the book before, so I gifted it to my parents for their wedding anniversary.  My sister really wanted everyone to take it this past weekend as it might help with her gift giving!  I couldn’t remember exactly what my love language was.  I retook it tonight and got “Words of Affirmation” that was only one point ahead of “Quality Time.”  No big surprise!  Take the quiz here and see what you get!

  1. We have had a really wet week here in Mn and this weekend we are supposed to get bad storms, ugh. I look forward to warm sunny days! I had to laugh about your crazy meal planning, haha! I love to meal plan also, but have been slacking lately, oops…
